Balsamic Strawberry Shortcakes

To me, nothing says spring like a strawberry shortcake. Strawberry shortcakes are a classic, delicious, and oh so festive dessert that really celebrates the sweetness of my favorite spring-time fruit.

Yet here’s the thing with strawberry shortcakes, the can be a little, dare I say it, boring…. Sometimes the biscuit is too dry, the cream not so sweet and the berries a little too soaked in sugar. So When you have a dish like a shortcake that is so simple in its components, every ingredient needs to be top-notch.

These shortcakes have been inspired by recipes in nearly every vintage book in my collection: when you have a dish that’s as classic as a strawberry shortcake, inspirations come in many forms. However, what I have done with this recipe is add a little modern twist. Italians love the combination of balsamic vinegar and strawberries, and so does Collin Murray. I frequently will sprinkle balsamic vinegar on strawberries and vanilla ice cream, so I figured that the combination would likely work well with a shortcake too and boy was I was right.

Tender, flaky biscuits, softly whipped sweetened cream and strawberries that have the perfect balance of sweet and tart make these shortcakes a winning combination and a welcome sign that spring has (hopefully) finally arrived.

Balsamic Strawberry Shortcakes

Makes 4-6 shortcakes

For the shortcakes:

½ recipe Cream Biscuits

For the strawberries:

2 cups strawberries, quartered

1-3 tablespoons granulated sugar (depending on the sweetness of the strawberries)

1 teaspoon good balsamic vinegar

For the whipped cream:

1 cup heavy cream

2 tablespoons granulated sugar

To prepare the biscuits:

Prepare biscuits as per recipe. Allow to cool slightly.

To prepare the strawberries:

Combine quartered strawberries, sugar (to taste) and balsamic vinegar in a medium-size bowl. Toss to combine. Allow to marinate for 20 minutes before tossing again.

To prepare the whipped cream:

Just before you are ready to serve the shortcakes, place the heavy cream and sugar in a large bowl. Using a large hand whisk or an electric hand mixer, beat the cream till soft peaks form.

To assemble shortcakes:

Cut the biscuits in half and place both onto a small plate. Spoon about ½ cup whipped cream and several strawberries onto the biscuits. Serve with additional whipped cream and strawberries if desired. Enjoy.
